Ochratoxin A (OTA), a secondary metabolite produced by Aspergillus or Penicillium families, is one of the most abundant food-contaminating mycotoxins, mainly found in crops and cereal products. It is a potent toxin affecting mainly the liver and the kidney in human being and livestock. Thus, preventing OTA-contaminated food and feed from directly or indirectly entering the food chain is crucial.
